Chili Recipe
In a large pot at medium heat, brown Beef, Onion, Pepper, Carrots, Garlic, separating the beef and stirring frequently to prevent burning and insure thorough cooking. Drain fat. (It’s easiest to use a colander, but then you have to clean the colander and whatever you drain into)
Add remaining ingredients, stir well.
Over medium/medium-high heat, bring to boil, stirring frequently to prevent burning. Once chili is boiling, reduce heat and simmer for 30 minutes, stirring occasionally.

Garden Fresh Focaccia
I usually use the bread machine's "dough" cycle to make this, but it isn't required.
To start, clean and de-stem the herbs and chop well with the garlic.
Next knead the olive oil, water, flour, yeast, table salt and the herb mixture.
Let rise to double in size at least twice.
Coat the inside of a pie pan liberally with olive oil. Press the dough into the pan, coating it with oil and creating lots of little depressions with your fingers. Note: The more oil you use the more crusty the bread will be.
Sprinkle the sea salt over the dough.
Bake in an oven at 375 degrees for 30 minutes.
Herb Garden Grilled Chicken
1. Seperate the leaves from the course stems of the herbs. (Discard the stems.)
2. Mix together and mince.
(I use a mezza luna, but you can use a regular cutting board.)
3. Add a little olive oil and salt and mince some more. You should have a pasty substance now.
4. Coat chicken breasts with the paste and start the grill.
5. Grill carefully - you don't want to scrape off the herbs.
Hot Whiskey Cold Fighter
HOT WHISKEY
1. cut a lemon into wedges, poke one wedge with 3 cloves
2. pour 1 shot of whiskey (any kind will do) into 1 mug of boiling water (it
should have a light brown color).
3. add cloved lemon wedge and one rounded teaspoon of sugar (you can add
more to taste).
Drink it up and go to sleep! You'll feel worlds better in the morning. Or,
have some sick friends over and make enough for everyone!

Very Simple Tomato Salad
This is a fast, simple, tasty and healthy salad. If you like this salad, consider planting a few cherry tomato plants next year. They are easy to grow and typically have a bountiful harvest.
Quarter the tomatoes.
Tear the basil into small pieces. You can cut it if you wish, but tearing brings out the oils and flavor better.
Mix all ingredients in a bowl.
Serve!
Dutch Oven Lamb Stew
Start the fire - This is a dutch oven recipe after all and you will need plenty of hot coals.
Add all of the ingredients to the dutch oven. I like to place the carrots, celery and onions on the bottom, but don't think it is necessary.
Set on the fire until done. I cooked ours for approximately one hour and thirty minutes over a very hot fire. I didn't place coals on top of the oven, but everything came out well just the same.
Be very careful removing the oven from the fire. It will be heavy, tippy and extremely hot!
Serve and enjoy... This was an amazing dinner. Very tasty and enjoyed by my whole family.
