Preparation Time: 1.5 hours
Ingredients:
1 medium lamb Shank
1 head of celery - chopped
1 small bag of carrots - chopped
2 large yellow onions - chopped
4 large red potatoes
1 can diced tomatoes
5 cloves chopped garlic
1 box of frozen corn
1 box of frozen peas
6 cups of water
Salt (I guessed on the amount)
Pepper (another guess)
2 sprigs of fresh rosemary
Cooking Instructions:
Start the fire - This is a dutch oven recipe after all and you will need plenty of hot coals.
Add all of the ingredients to the dutch oven. I like to place the carrots, celery and onions on the bottom, but don't think it is necessary.
Set on the fire until done. I cooked ours for approximately one hour and thirty minutes over a very hot fire. I didn't place coals on top of the oven, but everything came out well just the same.
Be very careful removing the oven from the fire. It will be heavy, tippy and extremely hot!
Serve and enjoy... This was an amazing dinner. Very tasty and enjoyed by my whole family.

Notes:
We visited a local demonstration on making maple syrup using traditional techniques. We were drawn to a second open pit fire, where a man dressed in period clothing was preparing a traditional dinner -- beef stew.
On the way home, we stopped for groceries and came up with this unusual dinner plan. We cooked it in our backyard fireplace, but will use this recipe for camping trips... without a doubt!
