History Our founders, Todd Welker and Chad Everts, were multi-unit (25+) franchisees of other national branded food QSR concepts prior to their mutual idea of testing the concept of a Nothing but Noodles restaurant in Albuquerque , New Mexico in April 2002. Experiencing rapid success, they made a business decision to move to a larger metro area to better test the concept amongst stronger restaurant competition. Scottsdale , Arizona became their new headquarter base for their company Noodles Development LP.
